Recipe – Tigernut Mocha Mousse Slice

Oh yeah we did. Well actually the lovely Yoko Inoue (founder of organic raw food and living food cafe, Shokuiku) did. And it’s delicious.

Ingredients you need to make Tigernut Mocha Mousse Slices:

 

tigernut flour
oat flour (gluten free, sprouted oats if possible)
cacao powder
your preferred liquid sweetener (Yoko used sunroot sweetener )

irish moss gel
coffee extract (organic, cold extracted if possible)
instant coffee or coffee alternative of your choice (Yoko used reishi here)
coconut butter
coconut oil
lakanto
sunflower or organic soy lecithin powder
cinnamon
salt

tiger nut milk , made with peeled tiger nuts and water
