Recipe – Tigernut Cookies

There is very little that can beat the feeling of reaching for a delicious snack and not have to worry about that little guilty feeling post consumption, virtual high five! Tigernut cookies, care of Food52;

Ingredients;
ground flax
3 tbs water
1/2 c tahini
1/2 c tigernut flour
1/2 c coconut pal sugar
1 tsp baking powder
dark chocolate pieces

Mix 3 tablespoons of water with ground flax and let sit in the refrigerator for 10 minutes
Mix with 1/2 cup of tahini, 1/2 cup tigernut flour, 1/2 cup coconut palm sugar and 1 teaspoon of baking powder
Stir in dark chocolate pieces and shape into cookies. Bake for 10-15 minutes until slightly brown. Enjoy!

    Hi! Thanks for the recipe.
    I just discovered chufa flour and I am exploring with it.
    I would like to try to make these cookies, but I am not sure how much ground flax is needed, It only says ground flax. I think it must be 1 Tbs of flax because the recipe calls for 3 tbsp of water.
