Super Simple, Allergy-friendly Tigernut Pastry

Don’t let your food intolerances hold you back from enjoying crumbly fresh pastries. Gluten-free baking genius Jennifer Pollard (AKA Birdseed Tweet) has created the perfect pastry recipe with the tasty nutty flavours of Tigernuts AND the bonus of their nutrient rich content.

This pastry is suitable for vegan, gluten-free, nut-free, dairy-free and low FODMAP foodies. It will be your go to for staple family desserts and entertaining guests – not to mention it’s easy as pie!

 

Ingredients

120g Extra virgin olive oil

70g Tigernut mylk and vanilla

60g sugar

300g Tigernut Flour

1 tsp baking powder

Pinch salt𒓉

 

Method

  1. Preheat oven to 180°C
  2. Blitz ingredients together in a processor
  3. Roll out dough between sheets of greaseproof paper
  4. Depending on what dish you are using the dough for, cut into desired shape and cook in oven for around 10 -15 mins. Set aside while you prepare your filling
