Recipe – Raw Blueberry Pie

Whoa, if there is something that we feel you can get away with having an addiction to it is this raw pie!! Well, we hope so anyway because seriously… addictive!!

 

 

Crust Ingredients

1/2 Cup tigernut Flour

1 1/2 cups shredded coconut

1 cup pitted dates

1 tsp vanilla extract

2 tbs lemon juice

1 tbs lemon zest

 

Pie Filling Ingredients:

1/4 cup natural almond butter

1 1/2 cups blueberries (fresh or thawed) – can substitute for any type of berry if preferred

1/2 cup virgin coconut oil

1/4 tsp himalayan salt

10 drops liquid stevia

1 tsp lemon

1 tsp vanilla extract

 

Prep time: 15 minutes
Yield: 12 individual pies or one large pie

 

Method

Place all crust ingredients into food processor and blend until dough-like

Spray muffin tin with a non-stick cooking spray

Evenly press down crust into each tin. Place muffin tin in the freezer whilst preparing the pie filling

Place all blueberry pie filling in the food processor and blend until well combined and completely smooth

Spoon filling into individual pie cases (or on top of pie crust if making one large pie)

Top blueberry pie with coconut icecream

 

Blueberry pie can be stored in the refrigerator in an airtight container for up to 3 days
