Recipe – Easy Tigernut Banana Bread

Is there anything better than reaching 3pm and knowing you have a delicious and guilt free afternoon delight waiting for you? We are going to go with a ‘no’. So on that note, here is the recipe for Easy Tigernut Banana Bread. It’s dairy and gluten free and perfect with a cup of tea. Trust us on this one. x

EASY TIGERNUT BANANA BREAD

3 bananas
1c tigernut flour
2 eggs
2 tbs coconut oil – melted
1 1/2 tbs honey (add a little more if you like extra sweetness)
1/4c coconut flour
1tsp baking soda
Cinnamon

1. Pre-heat oven to 180 degrees Celsius
2. Using a mix master combine all ingredients
3. Pour into a small loaf tin
4. Cook for 20-30 minutes or until firm to touch and golden brown

Enjoy with berries and honey, almond butter or whip up a coconut frosting (using very cold coconut cream and maple syrup)

    I replaced honey with Coconut Sugar. Doubled the coconut oil. And added half a cup of chopped nuts. Turned out great! Anyone know the calorie count for the posted recipe?

    Love these!! I can’t eat coconut, so I substituted avocado oil for coconut oil. For the coconut flour I used 2 cups Pamela’s artisan flour (blue bag). I added more honey, and added tsp vanilla and about 1/2tsp baking powder. I generally add blueberries to my banana bread but I thought I would try this without the first time :-). for the recipe!!
