Chocolate Tigernut Butter

Who doesn’t love a little nut butter (seriously, has anyone raised their hand?). But we get that unfortunately for those with nasty allergies, nut butter be a no-go zone. Enter Tigernut butter (and isn’t he looking fine!).

Without the hidden nasties found in most store bought nut butters, this homemade Tigernut butter is a great way to dose up on those healthy fats and protein while being a tasty as heck spread to use on your toast, in your smoothie or eaten by the spoonful (guilty).

Nut allergies? No problem. Tigernut butter serves as the perfect spread for all you non-nutty types that have been missing out for so long.

Tigernuts have a slightly sweet nutty earthy taste with a hint of vanilla. Now imagine this with coconut and cacao. Mmmm you’re very own sugar free nourishing version of Nutella. Hallelujah.

Whip it up with these super easy steps.

 

 

Ingredients

1 cup (125g) Tigernut Flour

1/2 cup Coconut Milk

2 tablespoons Coconut Oil

1/2 – 1 tablespoon Brown Rice Syrup

2 tablespoons Cacao Powder

1/2 tsp vanilla extract

 

Method

Add all ingredients to a high powered blender. Blend until smooth – this should take about 5 mins, you may to stop and scrape down the sides. Store in the fridge for up to 3 weeks.
